I'm 1/4 Irish. I WANT to like Corned Beef. Hasn't happened yet and about every other year I give it a try. :laughing

The first cut has a deeper color than this one. Does that mean anything or maybe it is just camera angle or lighting.

What a person often sees is that the cut closest to the exterior of the carcass has a different color than further in. I think its just exposure to oxygen. Not sure about this example.

I have never tried Wagyu beef. Love the USDA Prime, NY strip, and ribeye at Costco. The best beef I have ever had was in 1988 purchased at Safeway. In July of 1988, Safeway had a large fire at there facility in Richmond CA. Some old Barfers may remember. In the middle of the fire was a drive-in hanging meat locker. Someone at Safeway realized that the meat locker was not damaged but did not have any electricity. Rented generators kept the meat cold but the USDA would not allow the meat to be moved until the fire damage was cleaned up. A month later the OK was given and Safeway started to cut meat. The USDA inspector at our plant told me to go to Safeway and look for some dark beef on special and buy all I could. That is right Safeway sold over a month old dry-aged beef at a discount. People only wanted bright red meat back in 1988. The prime rib is still the best one I have ever cooked at home.

That can has over three grams of sodium (3.3 grams).

The Institute of Medicine (IOM), USDA, and the US Department of Health and Human Services recommend limiting daily sodium intake to less than 2.3 grams. That's about one teaspoon.

Ferry building in S.F. at Pier #1 has real Wagyu beef from Japan for $150/lb (Golden Gate Meat Co.). Marbling is extremely fine and evenly distributed. You can get as much or as little as you want. There's no need to season or put sauces on this beef (just distracts from amazing natural flavour). Eat it hot right off pan. Don't let it cool and no leftovers. It cannot be stored and re-heated. Just throw excess away.

Didn't say it was Irish, you said Americans don't eat boiled meat. That is a very common one that we do eat in volume. I don't know how you would boil ribs in a way that was tasty though.

When I eat it, I do eat it with Coleman's though. For that, pasties or Scotch Egg, I need Coleman's.

I love stews, which are also boiled meat. Typically do traditional Sunday roast. Simmered for 3-4hrs with carrots and potatos, very tender, yummy...

Ordered some flat iron steaks from Chicago Steak Company as a gift for someone. Wonder how American Wagyu compares to Kobe beef, because they probably are not pampered, and fed beer like Kobe cows.
