Christmas Dinner! What are you making?

Smile & Wave for me!
I usually do tamales but I am not sure this year. What are yall making/doing for Christmas Dinner? It is only 2 weeks away! YIKES! :laughing

Traditional, at least for one more year, assuming the turkey prices are reasonable. Ham as well, I like to make a (really) big pot of beans (lentil and split pea) with the ham bone and ham afterwards.

Of course, I'll be making the family Russian Tea recipe, as usual.

Russian Tea
>>> In a large pan, boil for 5 minutes the following ingredients <<
2 - Cinnamon sticks
1 cup - sugar
2 cups - water
>> In a smaller pan, steep tea for 6 minutes (don't leave in for too long, will become bitter) <<
2 cups water
6 - tea bags
>> Add the following to the large pan with water, sugar and Cinnamon <<
Steeped tea
6 oz - pineapple juice
1 cup - orange juice
1/3 cup - lemon juice
>> Add water to taste <<
I usually triple the recipe for family gatherings and keep it on very low to keep it hot for the rest of the day.

couple legs of lamb on the rotisserie
duck fat/rosemary roasted potatoes
citrus green beans
sauteed spinach

Yes. Any decent tea will work.

It's like making a long island iced tea, it's not the quality of the individual ingredients that makes it good, just the proportions. :laughing

Every year we get a smoked local pig from the butcher and heat it up on the BBQ on low wrapped in heavy duty tin foil with some apples tossed in for added moisture.

We have to do the head separately as it must come off to fit the rest on the BBQ.

Potato Dumplings, brussels sprout and cabbage. :thumbup

And traditional Christmas Crackers from the UK.

I cooked WAAAAAY too much at Thanksgiving. So, I will just chill at Christmas and let my Sister in Law cook.

I agree, there are some incredible cooks on the BARF!!!!!!!

We are a Tamale family here down in the swamp. My wife makes the best tamales I have ever tasted and I have eaten a lot of tamales. They are super moist and not a drink a gallon of water to eat them mess like most others I have had in my life. We usually wind up with tons of leftovers in the freezer for year-long tamale goodness.

Usually make appetizers for eating while making the tamales. Bacon wraps, deviled eggs, spinach dip and oh yeah the cracklins from the leftover pork fat are to die for... she takes the shoulder fat and renders it down and then when they are ready she sprinkles them with Tony Chacheres. MMMmmm hot out of the pan the insides are still a yummy melty fatty goodness with crispy meat parts.
