While your post is informative and greatly appreciated, I do not know which Costco you shop at, but, I shop at the Mtn View and Redwood City Costco, the Tri-Tip is $6.99/lb.

If you get it in the single or double package yeah its 6, but look for a large wrap package that is about the size of 6 racks of ribs stacked together. I had to do a double take with the others to make sure it was the same thing. Theyre not as trimmed as the single or doubles but can't beat the price for bulk.

The one I got was $70 for 18lbs, Costco in San Ramon btw

I rubbed my meat last night :laughing. Spare ribs, that is.

With a mixture of salt, pepper, granulated garlic, chili powder, paprika, onion powder, brown sugar, and a little tumeric and herbs du Provence. I should have some pics later!

I can confirm they were delish :thumbup

The worst part about home BBQ is you can never really enjoy a meal out with friends at a restaurant. The only time it comes close to as good is at a top dollar place where its hard to justify when you can do the same for far less, or its a real heart and soul BBQ hole in the wall which is pretty few and far between in the bay area.

Have you been to Brick Pig House in Oakland on Shattuck? It's pretty legit. :drool

Not sure how it would compare to some good ol' home smokin since I've never attempted to do it myself, but that's in the works.

I'm pretty sure you have to smoke tri tip to make it edible. *It's a tough cut. *:laughing

Eschew Obfuscation
Just picked up a Traeger as well.

Did a pork tenderloin with this dry rub from here

Set the Traeger on Smoke, and left it on about 8 hours. Took it off just north of 160. It came out very tasty, but a bit on the dry side.

Is that just because of how lean the tenderloin is, or should I pull off earlier?
