I'm one of those guys that could put anything into a croissant and call it gourmet. Like Guy Fieri says,"I'd put that on a flip-flop!" Thai Turkey and Basil Croissants with an egg wash and a little fresh cracked pepper. The serrano and garlic give it that extra yum factor.

Dough rose less than an hour, made the sauce from olive oil, tomato paste, garlic, oregano, water. Baked at 550 for 7 min



Pepperoni, quality mozzarella

I have been in Texas for a couple of months helping with our new grandson. Son in law has wanted a Pizza Oven for years, he finally has a place with a back yard for one. Below are pictures of his first pizza's, they were very good. We needed to get this heavy oven to his back yard over grass and through a fence. He said he did not know how we would do it. I told him it would not be a problem. Two sheets of plywood and a pallet jack would do it. I checked and $50 to rent a pallet jack. I said wait to rent until we need it. The driver arrived with a big crate. The first thing he said is "I can put it in your driveway but no farther" I told him it was worth $50 if he can help get it in the back. He said "No Shit, let's see what I can do" Best $50 spent in a long time. 20 min later the oven is in place.

You guys so have me wanting to do stuff in my backyard but it would be counterproductive to the 4-year plan of selling and moving.

So what kind of pizza oven and how much?

I am still using the old HH method of steel plate and broiling in my oven. Just did it the other night for my granddaughter's birthday as she requested homemade pizzas for her B-day dinner.

So doing some duck thighs and legs tonight. I've been curing them with salt and spices and then will sous vide in duck fat for ~8 hours @ 170.

I love sous viding it because you can use a fraction of the duck fat and it comes out amazing. You're supposed to do 36 hours @ 155 but I don't have the time and have done fine with 8 hours @ 170
