This recipe is pretty cinnamon forward. I like it, as did my family. I could probably omit some bone marrow, as it doesn't suit my tastes personally.
It was not spicy in anyway. If you want it spicy, maybe use some cayenne powder or some serranos.

Jack Cheese is the perfect cheese for this. Grate it fresh. The bagged stuff has too much wax to melt well.

Don't forget to cook both sides of the tortilla. This made about16-18ish tacos. Plenty of broth for everyone.

The chili oil is good for about 20 tortillas. But there is plenty of oil form the broth to supplement if needed.

I used 1 package of Short Ribs from Costco Bone in.
split between 2 bags. 4 Bone Marrow bones in each bag.
1 bay leaf per bag

* Birria Marinade Sauce *

1 Chicken Bouillon (I used better than bouillon)
6 Tomatoes
1 Cup Chili Water
2 Bay leaves
1 White Onion
1 tsp Cinnamon stick
1 Lime
1 tbsp Garlic Powder
4 tbsp Brown Sugar
Salt and Black Pepper to Taste

* Chili Oil *
1 tsp garlic powder
3 tsp Smoke Paprika
3 tsp Brown Sugar
1 tsp Black Pepper
1 tsp Dry Mexican Oregano
1 Chicken Bouillon (I used better than bouillon)
1 Cup Canola Oil

side note: If you have one of those V taco shell holders, use them. They get soggy if laid on their side. Or find some way to store standing up.

My in laws are staying with us during the pandemic. I get filipino food anytime i ask :laughing

I should probably learn to make some heritage dishes of my own.
I think okinawan food isn't for everyone though.

Do it! I learned how from my husband's grandfather who was full Filipino. But I need a recipe for pancit as he didn't cook it so go score me one! :laughing

The trick to good pancit bihon is to boil the noodles in chicken broth instead of water and don't add any oil. I prefer no shrimp. Just chicken and Chinese sausage along with the veggies, carrots and celery.

If you have ever had this at Apple Hill you know how good it is. Marilyn Thomas's recipe can not be bettered. This is a 30 year Thanksgiving tradition at our house.

EDIT: Fresh out of the oven. At daughters in TX and she only has one pie pan so the Pumpkin got it. But Sour Cream Apple Pie in a cake pan will taste the same.

I did a 24 dry brine of just a salt/baking powder mixture.

Spatchcock'd and cooked in the oven. It was slightly overdone, i didn't bother checking the temp until the 1 hour mark. I never thought a 14lb bird would cook in less than 1 hour......

The green you see under the skin was an herb/butter compound shoved under the skin.

Also pictured is pecan tarts as requested by the wife.

My 18 lb bird was done in 90 min so I could see it taking less than an hour. Plus I pulled it at like 152 and it finished off in the rest. If you pull at 165 it's gonna be overcooked.

A friend of mine raised a few goats and needed a hand. So we slaughtered and butchered one to see how it would go. We have 2-3 more to do next month.

It went well.

The goat had the most beautiful, white fat layer ever. It's been fattening up on all of the acorns this year, which has been an incredible year for acorns.

Each of us had minimal experience but did some research.

Here we are using a cleaver and mallet to break apart the sections:
