Suggestions for roadtrip

Planning one for end of July and I have 5-7 days for this trip. Ideally would include coast, inland, swimming holes for kids & dog to cool off + chill my beer too :laughing, some hiking. I have some routes in mind but doesn't hurt to check with BARF as BARF always has some good suggestions!
