Sauce or gravy ideas, Stuffed pork loin

Happy Thanksgiving!

I'm looking or suggestions for a sauce to serve with apple and apricot stuffed pork loin. I will be roasting it to 145º with a 10 minute rest, which nonetheless will leave it lacking in moisture.

I'm all set to make a mushroom gravy but think it will be too overpowering. Perhaps an onion gravy will do the trick.

Pig in 'shrooms is one of the most perfect dishes imaginable. You could do a creamy mushroom gravy or a sherry rich one, either works.

I'd go with the mushroom gravy, with plain vanilla mushrooms, not the baby bella or anything with more character.
