Er. . . both Ranch and Bleu Cheese condiments are for the healthy, good for you celery sticks. If you dip a hot wing in the sauce then you are a philistine and will ignore the celery stick anyway. (Flame on, I guess. . . .)
No tolerence for dairy in my tract so my go-to is equal parts mayo with fresh horseradish. Cool and sharp at the same time accentuating the crunch of the celery.
Good wings need no apres stove enhancement. a) Roast wings after slathering w/Crystal or Tobasco, retain drippings. b) thicken drippings with cornstarch, add black pepper and garlic. c) Toss wings in thickened sauce and broil for an additional ten minutes.
When you don't want to share, use habanero sauce and double the black pepper. That sorts out the wheat from chaff in your circle of friends.
Wife is now successfully recalibrated to the hot side of things, we burn through hot sauce (pun intended) by the case.
