Should be easy enough to pop the air cleaner off and look at the choke plate to see if it's behaving the way you suspect.

I had a 67 Sunbeam Alpine 1725cc sports car once.......sweet car......should have never sold it.

Anyway, it had dual side draft Stromberg carbs. The slides in these carbs was controlled by oil dampening, not springs.

Checking the oil in the carbs was a common thing to do.
