Pit Boss Lexington 500 sq. in. I didn't need large nor fancy wi-fi control so this should do me good. Gonna break it in tomorrow with some St. Louis ribs I picked up at Costco.

Just picked up the exact same model for my dad. As an FYI Walmart has them on sale for $239. I had bought it online at their $292 price. Went and picked it up. Got home and the receipt was emailed to me then a few seconds later another email telling me they had adjusted the price by $57 to account for the on sale price.

Not sure what you paid at Costco, but maybe you could do some Internet searching and get the Walmart sale price and see if Costco will adjust it for you.

Got the ribs at Costco the grill at Walmart. Online said $298 sign in store said $298 receipt said $298 and its a lot of grill for the price but now I'm sad wtf that $57 would have bought a nice brisket.

Pretender- I have a Traeger Texan, I had the smaller version, but got rid of it. It is too much for just the Wife and I, plus it's very inconsistent. I used to be able to leave it unattended for 12 hour cooks (while I go to sleep), but now I no longer trust it. It has caught fire, or it just goes out.,,,,,,, but 80% of the time it works great.

I've been wanting to pull the trigger on the Pit Boss. That sale price may make me do it.

HappyHighwayman- I call BS. All of your food is BETTER than restaurant quality.

Well first time with the pellet grill and came out fantastic. Smokey juicy sweet couldn't be happier hickory-maple-apple blend of pellets, used much less pellets than I thought it would. Best $300 I've spent in a long while.

Pork Belly candy and Pork Sirloin Tips in the pellet grill. Pork Belly was coated with sweet rub and chilli powder smoked for 3 hrs then glazed with honey brown sugar and cayenne pepper for 45 min. f-ing amazing

First brisket tonight. Total cook time was about 11 hours. Started at 225 degrees, then up to 250 degrees and finished with 275 degrees after the stall when I went to wrap. It was delicious but I notice towards the thinner part of the flat it was a bit on the dry side. My trimming needs alot of work, but all in all I'm pretty satisfied with the results.

Ok also cooking my first brisket and I'm wondering why people do this more than once :wow This better be fantastic guess I'll find out around 2130 when dinner will be ready. :twofinger the stall :laughing

I no longer bother trimming the fat cap.
Leave it at 225 for as long as it takes. Sometimes it 12-15 hours. Sometimes it’s 20.

Think Im gonna try Malcom Reed's method of leaving it at 195 over night and bumping it to 250 the following morning. Seems a lot less labor intensive.
