MC tow for excess 100mph?

I have heard people say they know of someone whose bike has been towed because they were going over 100mph. I have never found an authority section for this. I assume there is a bit more to the story, such as the rider was arrested for reckless or riding on a suspended license.

Can your bike or car be towed if you are cited just for driving in excess of 100 mph? Under which authority?

There is no specific authority to tow/impound a vehicle solely for a violation of speeding >100 MPH. That said, if the violator is arrested for any misdemeanor (such as reckless driving) or is unlicensed (or no class M, if applicable), it could be impounded.
