What PV setting should I run on a KTM/Husaberg 250/300 for Gnarly single-track, rock gardens, or Endurocross?

Green auxilliary spring vs Yellow or Red (Blue, White?)

How many turns preload in or out on the adjuster?

Double Kudos if you can recommend jetting for here in SF (Carnegie/Hollister) - Straight taper (CEK, DDK), Dual taper (Honda 13xx, 14xx, JD) or KTM Multi Taper (NOZx)?

Looks like you found all the helpful info to help you make an educated decision. It depends on how you ride/what you like. I personally ran my 250xc with the red spring, preload adjuster backed all the way out.

I run the red spring in my 300 with the adjuster flush on the outside of the casting (if that makes sense).

I went from red to green, don't notice much of a difference, still wants to kill me :laughing
