Added an Apeman C550 dashcam with front and rear cameras to my Yamaha FZ1 -- just to see how the video looked. This is a super cheap unit ($60 on Amazon) and it's really designed to mount on a car windshield.
First attempt to mount to bike's windscreen was a fail with huge vibration. Second attempt involved mounting front camera/dvr to bottom of bikini fairing and I think the images are passable. :thumbup Front cam is 1080p and rear is 720p.

Original videos are slightly clearer than YouTube, and I think in a collision the front camera would read a license plate, and the rear camera might if it was close to center of the view.
Note that the YouTube video is my first one using a new editing program and on-camera approach. Lots to still improve, but let me know what you think.
