Getting COVID doesn’t create immunity but a manufactured vaccine does?

There is immunity but they don't have 100% efficacy. I believe pfizer has 95% efficacy after the second dose. There have been many cases where people have contracted covid twice and very rarely 3 times. Each time symptoms get worse and leave long lasting effects by the virus (ie. Inflammation of organs).

So in short, you can still catch covid if you've been vaccinated. It just reduces your symptoms as your body starts to attack it.
