Brined overnight using Alton Browns recipe:

Spatchcocked and seasoned. I was debating if I should've smoked whole or using this method.

Smoked at 275 for 4 hours until breast hit 165. The recipe I was following called for 3 hours, and I was wondering if my Traeger probe was off again seeing as how I was getting varying temperatures with my thermaprobe. I went with my gut and decided to keep the bird on a bit longer. Glad I trusted my instinct, because holy shit this was the best turkey I've ever made. There's no going back to the oven now or cooking it whole.

Made some Memphis style dry rub ribs for the first time last night.

Smoked at 250 for about 5 1/2 hours. The recipe calls for a mop sauce but I just spritzed with apple cider which worked fine.

That smoked turkey looks great and I’d love to try it some time. I gotta have turkey giblets and drippings gravy with TGiving tho. That’s just a must have on the menu.

My sister brought some home made beef gravy and it paired pretty well with the turkey. Typically I like my turkey with cranberry sauce. I like the sweet with the savory.

Yeah, cranberry sauce is good with turkey. I like the gravy for the mashed taters and stuffing.

Got a nice rack of baby back for $12 so I just defrosted, removed membrane, rubbed down and smoking low and slow.

I have 2 chicken breasts I had brined so I spiced them up the same way and threw them on and will smoke to 165.

$1.99 a pound only thinking to be done is which rub (Pappy's Choice Seasoning from Costco and black pepper) maybe the best I've ever done. :)

Pit Boss pellet grill is f-ing awesome.

My brisket turned out amazing:love so good! Injected with chicken broth and apple juice, rubbed with mesquite bbq rub and pappy hot and spicy
