Just threw my brisket flat into the smoker after 15hr sous vide @135. Brisket point went into the freezer. Also finished the cured pork belly and gonna slice into strips of bacon. Crisps up well on an iron skillet. Plus I took it on a morning hike behind almaden valley.

How long did you cure it for? I might do a pastrami with the next brisket I get. Just starting to cure pork belly from costco for some bacon. 5 days can't come soon enough.
