When I got my BGE, I actually gave away my big gigantic stainless steel gas grill thing I got a Lowe's. I completely quit using it.

CAA what size did you get and how long have you had it? What is the warranty/parts like? Can you touch the outside while it is cooking and if so how much heat is coming off it? I am seriously interested in it.

It's the middle size. So 23" OTB. The owner of the company is one of the nicest guys I've ever spoken to. He will call you from Indonesia just to speak with you about which model is best for your needs. The parts and construction are industrial quality. You would seriously need to mistreat this thing first to break it. It has a lifetime warranty on manufacturing (Within reason) And if you did break it Dennis always has discounts for good customers. There's also a very active forum community always willing to help you out with questions. You can have it up to 800°F and then put your cheek on the dome. I promise you there is nothing better I ever purchased

I know right?! I barely use my stove!:laughing
^^^ What do you cook at 800°F?

Steak. I cook em to MR at around 450°f Take them off, crank the grill up to 800°f, throw them back on for about 30 seconds for a beautiful crispy reverse sear.

Should I have removed them before smoking as it was kind of a PITA to remove them after smoking?

Yeah, get yourself some good tweezers or medical clamps and pull the bones out of the fish fillet before you cook it.

I love BBQ/smoking and grilling. I've got one of each and a gas for when I am lazy and a portable one. That food looks amazing. I need to take pictures too but I think you win the awesome BBQ contest hands down.

Nice pastrami dude how long did you brine? I haven't tried one yet but I want to. Also what do you use to cure Prague powder TCM?

This one was pre-brined, I used a corned beef packed from Safeway. If I want to go nuts I get a pre-brined one from Robert's Corned Meats, or just buy a whole brisket and cure it myself for 10-14 days.

This is great because it's small and can be smoked in 3-4 hours, and comes pre-cured.
